INGREDIENTS:

  • 1 cup brown rice
  • 4 large eggs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 4 cups chopped spinach
  • FOR THE KOREAN BEEF
  • 1/4 cup brown sugar, packed
  • 1/4 cup reduced sodium soy sauce
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons sesame oil
  • 1/2 teaspoon Sriracha, or more to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 green onions, thinly sliced
  • 1/4 teaspoon sesame seeds

DIRECTIONS:

  1. In a large saucepan filled with 2 cups of water, cook rice according to package instructions; set aside.
  2. Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and slicing in half.
