Coconut Rice: 1¾ cups water 1 can (1¾ cups) coconut milk ½ tsp. salt 2 cups jasmine rice

Total Time: 22 Minutes, Servings: 4 Servings

Ingredients :
  • 1 cup white jasmine rice uncooked
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 teaspoon salt
  • 3 slices ginger root
  • 1 cinnamon stick optional



Instructions :
  • Rinse the rice until water runs clear.
  • Add all ingredients to a medium saucepan, stir to combine. Bring to a boil, cover and reduce heat to low. Simmer until liquid is absorbed, 15-20 minutes.
  • Remove the ginger slices and cinnamon stick, fluff rice with a fork and serve.
